Wash 3 medium sized zucchini. Grate the zucchini and sprinkle salt. The water helps extract the water from the zucchini.

Remove most water from the zucchini by pressing with a potatoes masher or dabbing with towel

Other ingredients for this recipe are 2 eggs, 1/2 cup of heavy cream or half & half, black pepper and salt to taste.

Mix the eggs, half & half, pepper & grated zucchini

Pour mix into frozen pie shell

Bake mix at 375 degree F for 30 - 45 mins
