Lemon Blueberry Scones

Ingredients: Flour (2 cups), Sugar (2 table spoons), Baking Powder (2 tea spoons), Salted butter (6 table spoons & cold), Blue berries (half - 1 cup), Milk (1/4 cup), Eggs (2 large), Lemon (juiced and zested).

Mix dry ingredients

Mix flour, sugar, baking powder and lemon zest

Grate cold butter

Use grater to cut cold butter into pieces

Mix

Mix the butter chunks into the flour mixture

Add Blueberries

And mix

Wet ingredients

Mix milk and eggs. Add to the flour mixture and mix. We added the lemon juice to this step

Prepare to bake

Transfer the dough to a flat baking pan that is lined with parchment paper. Flatten the dough to about 1 inch thickness.

Bake

Bake at 425 oF for 15 - 18 mins

Cool

Cool to room temp

Enjoy
