Egusi Soup

Cook the meat

Start by slicing your meat into desired chunks. Add Maggi cubes (2-4 cubes), salt (to taste), and sliced onions. Cook for about 30 mins till the meat is fully cooked.

Assemble remaining ingredients

To complete the soup, you will need red/palm oil, crayfish, pepper, ground egusi, spinach/pumpkin/bitter leaf vegetable

Fry Egusi

Fry ground egusi in palm oil. I used 4 table spoons of oil and 6 table spoons of egusi for this recipe

Add fried egusi and spices

Add the fried egusi, crayfish, pepper, salt and other spices to the cooked meat

Simmer and Stir

Continue cooking the soup and stir occasionally

Add vegetables

Add favorite vegetables and continue to simmer. I used frozen spinach in this recipe. I ran hot water through the spinach and squeezed extra water from the spinach. I did this to remove extra water being added to the soup
